1/2 kl pork, diced
1/8 kl pork liver, diced
1 head of garlic, minced
1 onion, minced
2 pcs laurel leaves
3 tbsp oil
½ c vinegar
3 tblsp patis
2 c stock
1 c pig blood, frozen
4 long green peppers
2 tsp sugar
1 tsp salt
½ tsp black pepper

In a pot, simmer pork for 30 minutes, removing any scum that rises to the surface.
Keep stock.
In a casserole, heat oil and saute garlic and onion for a minute.

Bopis

1 kl pig’s heart, clean, boiled and minced
1 kl pig’s lungs, clean, boiled and minced
1 head of garlic, minced
1 onion, minced
3 tbsp oil
½ tsp oregano
1 laurel leaf
3 pcs red bell pepper, diced
½ c vinegar
1 c stock
Pinch of salt & pepper

In a saute pan, heat oil and saute garlic and onion.
Season to taste with salt & pepper.

Add in oregano, laurel leaf, red bell pepper and vinegar.
Bring up heat and allow boiling without stirring.
Stir in stock and hot chili pepper.

2 lbs pork tongue
1 (15 ounce) can tomato sauce
3 tablespoons catsup
3 tablespoons vinegar
1 1/2 cups potatoes, cut into strips and fried
1 medium onion, sliced
1/2 cup canned mushrooms, halved
1 red bell pepper, cut into rings
1 1/4 cups tongue stock
2 tablespoons brown sugar
1/2 teaspoon hot sauce
1 bay leaf, crushed
3 tablespoons margarine or oil

MARINADE
1 tablespoon lime juice
soy sauce
salt and pepper

Longanisang Sumsuman

3 kilo pork
10 cloves garlic, pounded
1 onion, chopped
1 ts. salt
1/2 tsp saltpeter (salitre)
2 tbsp sugar
1 tsp black pepper
1 c soy sauce
1/4 c vinegar
2 pcs bay leaf
1/2 tsp oregano

Remove skin from pork. Cut into small cubes or grind coarsely. Mix salt, saltpeter, sugar and pepper. Sprinkle mixture over pork Add garlic and onion. Mix. Cover and set aside in the refrigerator. Heat soy sauce and vinegar. Add by leaf and oregano. Continue cooking til mixture boils. Cool.
